Ingredients

Calabrian Sweet Soy

  • 2 tsp Corto® Agrumato-Method Calabrian Chili Olive Oil
  • 2 Calabrian chilies (packed in oil)
  • 1 cinnamon stick
  • 2 Indian bay leaves
  • 3 green cardamom pods
  • 1 black cardamom pod
  • 12 pink peppercorns
  • ½ tsp fennel
  • 5 cloves
  • ½ cup soy sauce or tamari
  • ¾ cup water
  • 3 Tbsp slab sugar or light brown sugar

To Assemble and Serve

  • 2 Tbsp chili oil (include sediment if it exists!)
  • 1 Tbsp Calabrian Sweet Soy
  • 1 Tbsp Corto® Agrumato-Method Calabrian Chili Olive Oil
  • 1 tsp garlic, crushed (optional)
  • 6 dumplings

Directions

For the Calabrian Sweet Soy

Heat 2 tsp Agrumato-Method Calabrian Chili Olive Oil in a saucepan over medium heat until shimmering. Add the Calabrian chilis and all of the whole spices to the saucepan and toast until fragrant, about 3 minutes.

Next, deglaze the pan by adding the soy sauce, water, and sugar. Simmer until the liquid has reduced by half, about 30 minutes. Strain the liquid and reserve.

To Assemble and Serve

Combine all ingredients and serve over top of or on the side with your favorite dumplings.
