Date Vinaigrette

  • 2 T TRULY® 100% Extra Virgin Olive Oil
  • ½ C green onions, chopped
  • 3 T capers, drained
  • 2 ¼ C Alta Cucina® Plum Tomatoes, coarsely
    chopped and drained

Cousin Lorene Freggiaro created this light and simple sauce that is delicious served as an appetizer with fresh bread, cheese and vegetables, or over pasta for an easy meal.

Lightly sauté onions and capers in TRULY® 100% Extra Virgin Olive Oil, just enough to blend flavors.

Gently fold in the chopped, drained Alta Cucina® Plum Tomatoes.

Finish with a drizzle of TRULY® and a few extra green onions for color.

Serve with bread (try Lala Mina’s Focaccia), cheese and fresh vegetables as an appetizer, or over capellini as a light main dish.
