Grilled Halloumi Salad

Ingredients

  • 2 8.8oz packages of halloumi, drained
  • 2 tbsp Corto La Padella Sauté Oil
  • 3 oz fresh spring greens
  • 1 persian cucumber, sliced
  • ½ red onion, sliced
  • ¼ cup pitted castelvetrano olives, sliced
  • 1 small watermelon radish, sliced and cut into triangles
  • ¼ cup fresh mint leaves, roughly chopped
  • Juice of 1 lemon
  • 1 tbsp Corto Truly 100% Extra Virgin Olive Oil
  • Salt and pepper, to taste

Directions

Prepare the grill at high heat.

Cut the halloumi pieces in half lengthwise, then diagonally to create triangles. Use a basting brush to coat all sides of the halloumi with the Corto La Padella Sauté Oil.

Place the halloumi on the grill and reduce heat to medium. Grill for a few minutes on each side, until your desired level of char is reached. Set aside to cool while assembling the salad.

In your serving bowl, add the spring greens, cucumber, red onion, olives, watermelon radish, mint, lemon juice, 1 tbsp Corto Truly 100% Extra Virgin Olive Oil, and salt and pepper. Toss, taste, and adjust flavors to your personal preference. Top with the cooled halloumi and enjoy!
