Ingredients
Serves 4-6
- 1 head of garlic
- ¼ cup TRULY® 100% Extra Virgin Olive Oil, plus extra to roast garlic and garnish hummus
- 1 15-oz can cannellini or great northern beans, drained and rinsed
- 2 Tbsp tahini
- 2 Tbsp lemon juice, freshly squeezed
- 1 tsp lemon zest
- 1/2 tsp kosher salt, plus more to taste
- 1–2 Tbsp cold water
- Optional garnish: fresh herbs, smoked paprika, cumin, or everything seasoning
Directions
First, roast the garlic. Preheat the oven to 400°F. Slice the top off the garlic head, drizzle with TRULY® 100% Extra Virgin Olive Oil, wrap in foil or place in a dish, and roast for 35–40 minutes until soft and caramelized. Cool, then squeeze out the cloves.
In a food processor, combine roasted garlic, beans, tahini, lemon juice, lemon zest, kosher salt, and 1 Tbsp of water. Blend until mostly smooth.
With the motor running, slowly drizzle in ¼ cup TRULY® 100% Extra Virgin Olive Oil, until the dip is creamy and emulsified. Add more water if needed until the desired consistency is achieved. Taste and adjust with more lemon, salt, or tahini to taste.
To serve, spoon hummus into a shallow bowl, drizzle with more TRULY® Extra Virgin Olive Oil, and garnish with fresh herbs, smoked paprika, or everything seasoning. Enjoy with grilled vegetables and flatbread.
