Truly Delicious Bruschetta

Ingredients

  • 1 jar of Piccolo® Datterini Baby Plum Tomatoes, drained and roughly chopped
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 3 tbsp TRULY® Extra Virgin Olive Oil, plus more to serve
  • 1 tbsp chopped garlic
  • Handful of basil leaves, chopped
  • 1 baguette

 

    Method

    Put tomatoes, salt, pepper, Extra Virgin Olive Oil, garlic and basil in the blender and do a brief pulse to achieve a rough chop.

    To make crostini, cut the baguette diagonally into “¼-½-inch thick slices.  Brush each side of each slice with TRULY® Extra Virgin Olive Oil.  Then toast in the oven at 425 F for 5 minutes, flip over and toast for 5 more minutes.

    Serve the bruschetta topping over toasted crostini. Plate immediately before serving.
