Our Annual Fall Harvest is finally here!

The waiting is over! With misty mornings and the chill of Fall in the air, our mature green olives now have a visible hint of violet color. This color change is the signal that tells our agronomist, field team, and dedicated family of growers that the fruit has reached its absolute peak of freshness and flavor!

In the coming weeks, our harvesters will be busy 24/7, gently transferring the fresh fruit from the trees into awaiting gondola trailers before being whisked away to our state-of-the-art mill for cold extraction within hours.

In this photo, Corto’s president, Cliff Little, carefully examines the freshly-picked incoming fruit. After a quick wash, the olives will be rapidly transformed into exceptionally fresh Extra Virgin Olive Oil. Our Master Miller and sensory analysis team then meticulously taste and test the oil for quality and consistency. Only then is the freshly-extracted oil safely tucked away in our climate controlled cellar, away from flavor-damaging heat, light, and air!

The race to pick our fruit at the peak of freshness to create award-winning, exceptionally fresh, TRULY® Extra Virgin Olive Oil has started. And we will not rest until our job is done. This Fall season, we continue our pursuit of perfection, from the soil to the oil.
